Happy National Pancake Day!
Every weekday morning, while my husband is off taking our middle schooler and our high schooler to their respective schools, I’m at home with our nine-year-old twins inhaling my first cup of coffee and wondering why these kids have such abundant energy at such an ungodly hour. All right, so 7:30 am isn’t ungodly, but it’s not like it’s delightful, either.
Once that first cup of coffee (in a seasonally appropriate mug) has been consumed and a whisper of humanity has reached my brain, the twins are hungry. Sure, they’re old enough to make their own breakfast, but they’re the babies. They are the last two of our four kids who need me for anything, who ask me for anything (other than to ‘order this’ or ‘I added some new stuff to the Lululemon cart, can you submit that order and I’d like it here before Thursday, please,’ or ‘can you drive me to…’) and I want to hold on to that. So, I’ll make them breakfast any day.
Their favorite is my homemade pancakes. At the risk of sounding like a braggart, I do make the best pancakes around. Baked goods, after all, are really wherein lies my kitchen talent – and my kids know that the superior pancakes come from mommy.
